- 1 rabbit, cut into pieces
- 1 chicken, cut into pieces
- 1/2 cup green beans

- 1 pinch saffron threads
- Salt to taste
- 1 sprig fresh rosemary
- Lemon wedges for serving
Instructions:
- Heat olive oil in a wide paella pan over medium heat. Add the rabbit and chicken, browning on all sides.
- Add green beans and lima beans to the pan, cooking until tender. Stir in the grated tomato and sweet paprika.
- Add the rice, ensuring it is evenly distributed across the pan. Pour in the chicken broth, and add the saffron and rosemary.
- Bring to a boil, then reduce the heat to medium-low. Cook uncovered for 20 minutes, or until the rice has absorbed the broth and developed a crust on the bottom.
- Remove from heat, cover with a cloth, and let it rest for 5 minutes.

Recommended Paella Restaurant PuigMola, only open for lunches and booking (& pre-ordering) is essential. Their specialty is paella (reputedly the best in the whole province) and a minimum order is for three people. However, it is not a problem for two to eat here and the cost of a 3 portion paella is approximately €40. Very popular with local people.
