Paella

Paella Valenciana is a traditional Spanish dish from the Valencia region, known for its vibrant flavors and communal style of cooking. The dish is made with a variety of ingredients, with a focus on fresh and locally sourced produce.


Ingredients:

  • 1/4 cup olive oil
  • 1 rabbit, cut into pieces
  • 1 chicken, cut into pieces
  • 1/2 cup green beans
  • 1/2 cup lima beans
  • 1 ripe tomato, grated
  • 1 tsp sweet paprika
  • 2 cups Bomba or Fallera rice
  • 5 cups chicken broth
  • 1 pinch saffron threads
  • Salt to taste
  • 1 sprig fresh rosemary
  • Lemon wedges for serving

Instructions:

  1. Heat olive oil in a wide paella pan over medium heat. Add the rabbit and chicken, browning on all sides.
  2. Add green beans and lima beans to the pan, cooking until tender. Stir in the grated tomato and sweet paprika.
  3. Add the rice, ensuring it is evenly distributed across the pan. Pour in the chicken broth, and add the saffron and rosemary.
  4. Bring to a boil, then reduce the heat to medium-low. Cook uncovered for 20 minutes, or until the rice has absorbed the broth and developed a crust on the bottom.
  5. Remove from heat, cover with a cloth, and let it rest for 5 minutes.

Their specialty is paella (reputedly the best in the whole province) and a minimum order is for three people. However, it is not a problem for two to eat here and the cost of a 3 portion paella is approximately €40. Very popular with local people.

Ingredients:
– 4 cups rice.
– 8 cups fish stock.
– 8 king-sized prawns/langoustines.
– 8 mussels.
– 200 gr shrimps.
– 200 gr peas (fresh or frozen).
– 2 tomatoes, skinned and chopped.
– 2 cloves garlic, thinly sliced.
– 1 Packet Paella Spices.
– Olive oil for frying.
Method:

  1. Sauté garlic in a paella-type pan.
  2. Cook for a few minutes.
  3. Add tomatoes, peas, shrimps and saffron.
  4. Add rice and stock.
  5. Simmer for approximately 20 minutes.
  6. Decorate with prawns and mussels.
  7. Cover paella with a lid.
  8. Poach the seafood for a few minutes.
  9. Decorate paella with lemon quarters.
  10. Enjoy!
